Herbed Chicken Parmesan

Herbed Chicken Parmesan

Servings: 4   Points Plus: 8

1/3 cup fresh Parmesan cheese, grated & divided
1/4 cup bread crumbs
1 T fresh parsley, minced
1/2 tsp dried basil
1/4 tsp salt, divided
1 large egg white, beaten
1 lb chicken breast or tenders
1 T butter
1 1/2 cups store-bought pasta sauce
2 tsp balsamic vinegar
1/4 tsp black pepper
1/3 cup provolone cheese, shredded

Combine 2 T of the Parmesan cheese, breadcrumbs, parsley, basil and 1/8 tsp of the salt in a pie plate or other shallow dish.  Dip each piece of chicken in egg white, then dredge in breadcrumb mixture.  Set aside. 

Over medium-high heat, melt butter in a non-stick pan.  Add chicken and cook for 3-4 minutes on each side, or until done and browned.  Remove from pan to a shallow baking pan or cookie sheet.  In same pan, put pasta sauce, vinegar, remaining salt and pepper and stir over medium-high heat until it bubbles.  Pour sauce over chicken.  Sprinkle remaining Parmesan cheese and provolone cheese over chicken and put under the broiler until the cheese melts.  Enjoy!
